Buttermilk Pie

This is a pie my grandfather made, and then passed down. We make it every Thanksgiving. It is so yummy, very sweet, but tasty. It makes two pies, perfect to make if you're going to someone's house, or if you're having a crowd over! We use my Grandmother's Pie Crust with this and every pie we make.

Ingredients

1/2 cup flour
3 3/4 cups sugar
1 teaspoon salt
1 cup butter, melted and mixed into flour mixture
6 eggs barely beaten
1 cup buttermilk, room temperature
1 Tablespoon vanilla

Directions
1. Blend flour, sugar and salt.
2. Blend the eggs, vanilla and buttermilk to add to the flour mixture.
3. Fill two unbaked pie shells.
Bake in 350F oven for 45-50 minutes.

Serves 16.

Strawberry Rhubarb Pie

I enjoy rhubarb and had it on several occasions while at our family place in Canada, along with blueberry pie (my favorite!). I had a friend make me a strawberry rhubarb pie a couple years ago, and I loved it. I found this recipe and hope to make it again soon.

Ingredients

  • 1 cup white sugar
  • 1/2 cup all-purpose flour
  • 1 pound fresh rhubarb, chopped
  • 2 pints fresh strawberries
  • 1 recipe pastry for a 9 inch double crust pie
  • 2 tablespoons butter
  • 1 egg yolk
  • 2 tablespoons white sugar

Directions

  1. Preheat oven to 400 degrees F (200 degrees C).
  2. In a large bowl, mix flour and sugar. Add strawberries and chopped rhubarb. Toss with sugar and flour and let stand for 30 minutes.
  3. Pour filling into pie crust. Dot top with butter, and cover with top crust. Seal edges of top and bottom crust with water.
  4. Apply yolk to top of pie, using a pastry brush. Sprinkle with sugar. Cut small holes in top to let steam escape.
  5. Bake at 400 degrees F (200 degrees C), for 35 to 40 minutes, or until bubbly and brown. Cool on rack.

Marshmallow chocolate chip pie

This one is quick to make, but takes awhile to set. It is worth it in the end though, it tastes like a s'more in pie form!

Prep time: 30 minutes
Ready in: 13 hours

Ingredients

  • 16 graham crackers, crushed
  • 1/3 cup butter
  • 30 large marshmallows
  • 1 cup heavy whipping cream
  • 1/4 cup hot milk
  • 1/2 (1 ounce) square semisweet chocolate, grated

Directions

  1. Mix crushed graham crackers with butter or margarine. Reserve 2 tablespoons of this mixture for the top of the pie. Press remaining mixture in pie pan.
  2. Cook milk and marshmallows in a double boiler until marshmallows are melted.
  3. Cool marshmallow mixture. Fold in whipped cream, and add grated chocolate.
  4. Pour chocolate marshmallow mixture into graham cracker pie shell, and put reserved crumbs on top.
  5. Refrigerate several hours or overnight.
