I will post soon, I promise. I've been so busy lately, I haven't had much time to get on the computer.
I have a few desserts and a couple entree items I'll be posting hopefully by the end of the month. Bear with me, I'll be back soon!
I wanted to share recipes that have been passed down to me, as well as new recipes that I find.

Chocolate Chip Cheesecake
Oh my holy goodness! DH asked me to make him this (my very first cheesecake ever) for Father's Day. So, I looked up a recipe and found one that looked good. I made it on Saturday and let it sit in the fridge until taking it out Sunday afternoon. I highly recommend making this if you're in to cheesecake. :)
Ingredients
1 chocolate crust (unless you have a cheesecake pan, then you'll need this: 1 pkg chocolate graham crackers, 1/2 cup melted butter, 2 tablespoons white sugar)
2 (8 ounce) packages cream cheese, softened
1/2 cup brown sugar
2 eggs
1 egg yolk
1 teaspoon vanilla
1 cup mini semisweet chocolate chips
Directions
1. Preheat the oven to 350F. Refrigerate crust while making filling.
2. In a large bowl, beat cream cheese and brown sugar until smooth.
3. Beat in the eggs and egg yolk.
4. Stir in the vanilla.
5. Fold in the chocolate chips.
6. Pour filling into pie crust.
7. Bake in preheated oven for 50 minutes, or until filling is set.
8. Refrigerate over night, cut into the next day and enjoy! :)

Shark anyone?
This is by no means a traditional dish, but while fishing this weekend during the Warrior's Weekend in Port O'Connor, Clint caught a bull shark! It was filleted for him, and we brought it home. I have never made shark before, but I thought I would put up the recipe I found and used for it just in case someone has or finds someone who needs a shark recipe.
Something I would change unless you like super salt taste, would be to cut down on the soy and garlic salt. I did use garlic powder as well, because I didn't have enough onion powder. It was an excellent starter recipe though. Just something to play around with I think!
Seven Spiced Shark Steaks
Ingredients
2 Shark filet's
1/4 cup Worcestershire sauce
1/4 cup soy sauce
2 Tablespoons garlic salt
2 Tablespoons onion powder
2 Tablespoons thyme (fresh or not...)
1 Tablespoon chili powder
1/2 Tablespoon black pepper
Directions
1. Rinse and cut off any extra skin on the sharks.
2. Mix, in a small bowl, the ingredients until paste like.
3. Rub on both sides of shark, place on a plate and let sit in the refrigerator for at least 20 minutes.
4. Preheat oven to 325F.
5. Arrange shark on a baking sheet and cook all the way through, about 40 minutes. Flip once at 20 minutes.

Baked Spaghetti
As you know by now, I use Allrecipes frequently. I really have enjoyed almost every recipe I've found on there. Here is another I found and kind of made my own. It's really simple and good for a quick meal.
Ingredients
1lb Spaghetti noodles, uncooked
1-26 ounce can of your favorite spaghetti sauce (I used garlic & herb)
1lb ground beef
1 cup of your favorite cheese (I used 1 cup cheddar and 1 cup mozzarella)
9x13 pan
Directions
1. Preheat oven to 350. Brown ground beef. While doing so, bring water to a boil, then add noodles.
2. Add can of spaghetti sauce to the beef, stir and simmer. Cook noodles to your liking.
3. Drain noodles and add to beef and sauce, stir.

Strawberry Rhubarb Pie
I enjoy rhubarb and had it on several occasions while at our family place in Canada, along with blueberry pie (my favorite!). I had a friend make me a strawberry rhubarb pie a couple years ago, and I loved it. I found this recipe and hope to make it again soon.
Ingredients
- 1 cup white sugar
- 1/2 cup all-purpose flour
- 1 pound fresh rhubarb, chopped
- 2 pints fresh strawberries
- 1 recipe pastry for a 9 inch double crust pie
- 2 tablespoons butter
- 1 egg yolk
- 2 tablespoons white sugar
Directions
- Preheat oven to 400 degrees F (200 degrees C).
- In a large bowl, mix flour and sugar. Add strawberries and chopped rhubarb. Toss with sugar and flour and let stand for 30 minutes.
- Pour filling into pie crust. Dot top with butter, and cover with top crust. Seal edges of top and bottom crust with water.
- Apply yolk to top of pie, using a pastry brush. Sprinkle with sugar. Cut small holes in top to let steam escape.
- Bake at 400 degrees F (200 degrees C), for 35 to 40 minutes, or until bubbly and brown. Cool on rack.

Chicken Primavera with Pasta
My husband had his wisdom teeth out, and ended up having to have surgery to close the hole that went into his sinus because it was causing him pretty extreme pain. This is one of the first meals he's been able to eat since he got them out! I changed it up a little bit from the original, but not much.
Ingredients
1 pound chicken breasts, cut into bite size pieces
1 1/2 cup brocolli, cut
1 red bell pepper
1 (10 ounce) tub of Philadelphia Savory Garlic cooking creme
2 cups cooked fettuccine or your favorite pasta
Directions
1. Boil water, add pasta and cook to your likeness.
2. Cook and stir chicken in a large non stick skillet until done. Add veggies; cook 2 to 3 minutes.
3. Add cooking creme; stir and cook for 3 minutes.
4. Stir in pasta and serve while warm.
